Easy, quick, delicious and perfect for a cold winter's night. This meal consists of smoked beef bratwurst topped with caramelized onions, garnished boiled potatoes, and my personal favorite RED CABBAGE WITH BACON! If you've never had pickled red cabbage and bacon I HIGHLY recommend it! It is sweet, salty, smokey and the perfect item to break up the occasional meal monotony. 30 Minute Germanfest Recipe & Instructions
Ingredients:
1 package fully cooked bratwurst (I used Johnsonville Beef Brats)
2 White (or Yellow Onions) - Sliced thin
2 Containers Sweet and Sour Cabbage (I used Aunt Nellie's)
1/2 Package Bacon - diced
2 Cans whole new potatoes (I used DelMonte)
4 Tablespoons Butter
1 Tablespoon Extra Virgin Olive Oil
1-2 Tablespoons Parsley- finely chopped
Salt
Pepper
Method:
Bratwurst & Caramelized onions
1. Heat a skillet over medium heat. Add 2 tablespoons of butter and about a tablespoon of olive oil to the pan, allow butter to melt.
2. Add your sliced onions to the pan. Season with a pinch of salt and pepper (around 1/8 tsp). Saute the onions, monitoring the flame and lowering if needed, until they are translucent and a nice caramelization has developed.
3. Add your bratwurst to the pan. Make sure they are in contact with the pan and not sitting atop the onions. Continue cooking until desired crispness - these are fully cooked and just need to be heated through.
Red Cabbage & Bacon
1. Open cans of pickled cabbage, drain both in mesh sieve.
2. Dice 1/2 of a package of bacon. I used applewood smoked bacon. This is a preference and you can feel free to add more or less bacon based on your families taste.
3. Add bacon to a cold skillet (See the video above for my tip as to why I recommend this method). Fry the bacon until crisp (or however you like your bacon).
4. DO NOT DRAIN BACON FAT, unless it is an unusually large amount.
5. Add red cabbage to the pan, heat through, & serve!
Boiled Potatoes:
1. Open and drain both cans of potatoes. I like to rinse them for good measure.
2. Add the potatoes to a microwave safe dish.
3. Heat the potatoes for 2-3 minutes depending on your microwave.
4. Add 1-2 tablespoons of butter to the bowl, along with the parsley/salt/pepper to taste.
Serves 1-2 sausages, 3 potatoes, and about 1 cup of cabbage per person - so this makes a meal for 3-4 hungry people.
